I love to bake. To me it’s one of the best things you can do. I also love to try out new recipes and I don’t know why but I’ve been on a little vegan baking trip lately. I love to share new recipes with you, so let’s start with the carrot cake.
You will need:
- 200 grams of flour
- 180 grams of brown sugar
- 8 grams vanilla sugar
- 1 tsp baking powder
- 1 tsp cinnamon (if you don’t like cinnamon leave it out)
- 1/2 tsp of salt
- 75 grams shredded carrots
- 200 grams plant based yoghurt (I cheated and used regular yoghurt)
- 100 ml coconut oil
Add all the dry ingredients into a bowl and mix until well combined. Then add all your wet ingredients to a second bowl and mix until well combined. Add the wet mixture into the dry and mix until well combined.
Bake the cake for 40 minutes at 180 degrees Celsius. You can add shredded carrots on top of the cake if you want, or any decorations of your choice. I went for powdered sugar.
