Pineapple cake + the sunshine blogger award |Glücksgeist

I am finally enjoying baking again and now I can’t stop baking. I really wanted to make this pineapple cake from Tanya bakes for ages now and I finally got around to do it. The picture of it in her book looks so gorgeous and tasty and my mum and I absolutely love pineapple so this is the perfect cake to make.

Instead of just sharing the recipe I am going to tell you the behind the scenes of this baking progress. I really enjoy sharing more of my life so I thought this would be a lot of fun.

My mum moved flats in December and since that we didn’t have a kitchen at hers. The kitchen finally arrived so this cake was the premiere of all the upcoming baking tries. I was really excited to finally have a kitchen at my mum’s and I had so much space to bake which was really nice. I often bake in silence because I really prefer it but this time I watched Domtendo’s Let’s Play Mario 64 DS. I played this game as a child like crazy and seeing someone play it now brings back all the amazing memories. I really want to get a DS now and play it again.

As I said the kitchen is brand new so I spent quite some time to find all the baking equipment. I texted my mum a lot and I did find everything except of a cake tin. I looked for it 5 times in every cupboard but I just couldn’t find it. Luckily my mum had a second one and I went for a different shaped cake which was fine.

You obviously need pineapple for this cake and after looking for a tin-opener I found the worst one in history. My mum says she hates this one and needs to get a new one and I understand why. I don’t know who designed this but this thing is stupid. It took me nearly half-an-hour to get the freaking tin opened. I watched some YouTube videos because I couldn’t figure it out. It also involved using a hammer to get a freaking hole into the tin. It was quite something and I can know say that baking really is a sport.

But the whole time I was just laughing so much about how ridiculous it was that I was hammering on a tin to get the pineapple out of it. It was hilarious and luckily nobody watched me doing it. I got it open in the end and just hoped the cake would turn out good after this.

I placed the cake in the oven (the brand new oven who really works). The cake was supposed to bake for 30 to 35 minutes at 200 degrees Celsius. After 10 minutes the cake was already so brown that I turned it down to 180 degrees and placed it at the bottom of the oven. The cake turned out amazing and I am not sure how this happened but I was so happy about it.

This was quite a story but it actually was one of the best days I had this year. I felt super happy and although so many things went “wrong” I just couldn’t stop smiling. Did you try pineapple cake before? Let me know in the comments below.
