I may have a lemony problem but it’s okay and I am about to share an amazing and super delicious recipe with you. I currently love to bake vegan because the recipes are so quick and easy to make. I haven’t shared a proper recipe in a blog post for ages so here we go.
You will need:
- 275 g of plain flour
- 200 g of white sugar
- 2 tsp of baking powder
- 1 tsp of baking soda
- 1 tbsp of lemon zest (=zest of one lemon)
- 60 g of lemon juice (= juice of one lemon)
- 100 ml vegetable oil
- 170 ml cold water
Preheat your oven to 190 degrees Celsius. In a bowl add the flour, sugar, baking powder, baking soda and lemon zest and mix until well combined. Add all the wet ingredients in a separate bowl. Pour the wet mixture bit by bit into the dry and mix until well combined, but don’t over mix.
Add the mixture into a brownie tin and bake for 20 to 25 minutes. Let the cake cool down. Then add some icing sugar and water into a bowl and mix until well combined. Drizzle the icing over the cake and smooth it out.
I went for some butterfly decorations and added some Clementine on top to look like them 🦋. You can decorate your cake however you want.
