Vegan Lemon 🦋 Cake |Glücksgeist

I may have a lemony problem but it’s okay and I am about to share an amazing and super delicious recipe with you. I currently love to bake vegan because the recipes are so quick and easy to make. I haven’t shared a proper recipe in a blog post for ages so here we go.

You will need:

  • 275 g of plain flour
  • 200 g of white sugar
  • 2 tsp of baking powder
  • 1 tsp of baking soda
  • 1 tbsp of lemon zest (=zest of one lemon)
  • 60 g of lemon juice (= juice of one lemon)
  • 100 ml vegetable oil
  • 170 ml cold water

Preheat your oven to 190 degrees Celsius. In a bowl add the flour, sugar, baking powder, baking soda and lemon zest and mix until well combined. Add all the wet ingredients in a separate bowl. Pour the wet mixture bit by bit into the dry and mix until well combined, but don’t over mix.

Add the mixture into a brownie tin and bake for 20 to 25 minutes. Let the cake cool down. Then add some icing sugar and water into a bowl and mix until well combined. Drizzle the icing over the cake and smooth it out.

I went for some butterfly decorations and added some Clementine on top to look like them 🦋. You can decorate your cake however you want.

I went out this afternoon and got the oil and lemons and made this cake, amazing, it is so moist and delish, taking in to the shop where i volunteer tomorrow as my manager is vegan so result because every time I take something in she can’t have it, I will pop it up on my blog with a link to yours so they know where I got this cake from
